I would love to get my hands on some of these hops. If only some US suppliers would start carrying them.
I love English hops but, but regularly use US hops in addition to give it an extra kick for an IPA. These look like they could do the job by themselves.
Drinking some homebrew saison in the dark due to a power outage. Tastes great but this was my first time using Belle Saison and it tastes more like a dry Belgian blonde than a saison. Too fruity.
Lots of reason to dislike nitro in my mind. It really is just a way to fake a handpull. And not very well. Nitro always seems to make the beer less bright and fresh, with far less hop aroma.
Guinness uses a blend of nitrogen and CO2 instead of straight CO2 to dispense the beer. It is the extremely low solubility of the nitrogen that causes the cascade effect.
My personal choice for any hippy style is either Marris Otter or Golden Promise for 90-100% . If I use anything else it might be a touch of carapils, maybe some wheat, possibly some munich.

For me there are only a few rules for saison.
It needs to be yeast forward, preferably spicy over fruity.
It must be dry to extremely dry. No sweetness at all.
And above all it should be thirst quenching and drinkable.
Just my opinion.
I would suggest since so many of you seem to dislike using the proper word to describe something we should start communicating using only grunts and hand signals.

I hate pumpkin beer and I'm proud of it. It's not the pumpkin that bugs me though. It's the stupid nutmeg, allspice and cinnamon. They taste awful in beer.

You didn't miss much with the keewenaw. I had it a few weeks ago. It was ok, but nothing to seek out.
I made a saison using Hallertau Blanc recently and the tropical fruit/white wine character really worked well. For American varieties Amarillo can be very good.
For me there are three requirements for a saison.
It must have an expressive yeast. A combination of fruity esters and spicy phenolics.
Very dry. There should be no sweetness in the finish of this beer.
Extremely quaffable. Regardless of the abv you should be able to drink pint after pint.
Given your session and regional requirements I would do this
Dry Stout and Best Bitter for the English beers. For me the little more malt and hops in a Best Bitter make it a great year round beer. And you can rotate the stout and bitter on the nitro tap.
