    Safale US-04 yeast = funky flavor?

    Cool - blast from the past. I just checked all of my recipes, and it turns out I've subconsciously phased out US-04. I still use S-05, but as I've modified recipes over the years, US-04 has fallen by the wayside. And I don't seem to miss it.

    If you do this, make sure it's Halal, or you run the risk of ruining your batch.

    Big IBU oops

    I'm not sure I'd call it an IPA with that much wheat in it, but I would sure as hell try it. If you really only had 1.6 of Tomahawk at 60 minutes, you should be fine. Not sure how you got to 111 IBUs. Or 72 percent efficiency with extract. But I have not plugged your recipe into Beer Smith, so...

    Hmm. Yeah, big difference in headspace. But I never get near the 6 gallon mark with my krausen. Might be getting lucky, but I keep it at 72 degrees during ferm, so that helps keep things tempered. How hot are your ferms running? Before I got into ferm temp control, I thought it was neat to...

    What is your OG, and mash profile? I do 1.060-70 all the time with us05 in a 6.5 and never get near the need to throw a blowoff tube on. But that's with IPAs and stouts.

    I use 4 and 5 very frequently, and I have not had a problem, but I keep my primary ferm temp below 74 when possible. I chill down to 70, pitch a starter, and keep it below 72 during active fermentation. Try to anyway. Vinegar taste is a little concerning, but let's not worry too much just yet...

    So many variables in play. What was your recipe? Ferm temp? Sanitation? Ferm temp REALLY makes a difference, and can contribute to off flavors. Whatever you do, don't panic and toss it. Most off flavors dissipate and leave you with a great beer.

    Should be fine. I have had Primary get that high with no bad results (ales). Secondary, I wouldn't even sweat it.

    What he said, but even if you don't change your hop schedule, this is likely to turn out nicely. Good tip on re-using the grain bag. I'm lazy and don't empty my grains until the end, so I had an array of those bags handy (one for grains, another for hops, interchangeable), when I BIAB'd...
