    you'll probably pop the cap or rupture the sealed soda bottle, the yeast will produce many times the volume of Co2 over the course of the fermentation than is available in the dead space of the sealed bottle.

    Never experienced it just from time in ales myself, even leaving brews on the yeast for two or three months. But I always regret trying to brew in August, that's what I get for not setting up a cooler!

    from my experience you can get autolysis by letting a beer go through primary fermentation and letting it clear in the same vessel, and then holding it at 80*F or better for a few more weeks in the fermentor. Works like a charm! Plenty of dead and dormant yeast and nothing else around for them...

    Have you looked at it? I bet the hydro sample must be pretty clear by now. If your gravity is stable, cold crash and rack to keg. No worries IMO. :mug:

    When I'm pressed for time and need to crank out some dinner for the kids, my fall back is "Breakfast for Supper", French Toast and sausage (or bacon), with a side of fruit for the produce. The boys love it, and it's fairly painless for me.

    You can't. The best way to be sure is to look for the gravity readings to be the same over the course of about three days. Otherwise you can just leave it for three to four weeks and it will most likely be done by then.

    70*F is a little on the hot side even for an ale. Usually mid 60's is a better target for primary fermenting. Bottle conditioning should be at 70, but primary is better around 65-ish.
