I've been dry hopping for a week or two in a bucket. This helps with swelling hops. I've ripped a bag once trying to get hops out if a carboy and struggled for almost an hour trying to get the hops out if another bag. I will always dry hop in a bucket. Make clean up much easier. Also you can...

I've done a couple of IPAs with Simcoe. I do remember having the same question. The overwhelming flavor and aroma will mellow out after a few weeks. I think 5-6 weeks after brew day it was really enjoyable and kept getting better.

How many cherries did you end up using?
