Wanting to make a black ale (not ipa)

Back to page one and you request - look at New Belgium's 1554 there is a Clone recipe in Brew magazine. Ferments at 65, and sounds like it fits your bill. I've done two batches and it's gotten good feedback from those that I shared it with.

    What to do with Mulberries?

I've collected about 10lbs of mulberries, and the local trees are starting to wind down. I was hoping for a 3 gallon batch of wine- which wants 16-18 lbs. Looking for suggestions. They are frozen- so could be used in a future mead, wine or beer- but are taking room in the freezer...

Bottle harvesting- how do you know?

I know someone that works at NB, if I can call up there and ask any q's for ya, let me know. I'll also be up that way in June, and hope to take another walk through of the brewery...can ask then too. As for the weissbier- we brought home two kinds- a wheat and a dark wheat. Both have a yeast...

Bottle harvesting- how do you know?

I bought some Moosbacher Weisbier tonight- more for reusing the swing top bottles than for the beer. But I find we like the beer, and am thinking I'd like to culture the yeast. The package stated it was bottle fermented- so does that mean it is game on to culture the yeast from a bottle or two...

Whats the best way to harvest yeast from primary?

FWIW, I also hop the **** out of my starter wort. As I understand, the hops assist in preventing bacterial issues.

Whats the best way to harvest yeast from primary?

My only input is regarding ale yeast- I get into the fermenter around day two, when it is rocking, and pull from the krausen. I place that into a 1 gallon wine jug with sterile wort to make a low gravity starter for my next batch. When the yeast has fermented out sugars, I chill it, pour off...

    florida honey

Where in FL? I might have a contact for you in Jacksonville, Palm Harbor, or Interlachen. I keep bees as a hobby, but do not personally sell. Also, how much honey? Kinda impacts the price per pound. A barrel, or a souvenier- make a difference a little. If I can help, lemme know via PM.

Advice For A Brewer In Florida

I put my buckets/carboys into igloo drink coolers- placing frozen water bottles on top and or bottom. I use a 10 dollar digital thermometer I picked up at an aquarium store to monitor temps. Change out the the frozen bottles in the AM and again in the PM. Easy to keep around 65, a little more...

Do hops grow in West Central Florida on the Gulf of Mexico?

I just got my Centennial and Nugget in the mail today. I order based on disease resistance. Hopefully they do well- I'm an hour or so south of you both

    Poop

depending on what the horses are fed- you can get lots of weed seeds from uncomposted horse manure. Fresh manure is hot, and should be composted. 6 months seems like a conservatively long time- but I'm down south and things compost pretty fast...

    lack of bottle carbonation?

I bottled ten gallons of ale (OG 1.045) a week ago- today I popped the tops off a couple to see how they were doing. A swing top bottle cracked off almost like a .22, but when I took a bottle top off, it was nearly flat. So I tried another, it was flat, and a third... Normally after 5-7...
