stuck fermentation - mash temp or under pitching?

+1 for the idea of rehydrating the yeast. I know the calculator says <1 packet of dry yeast, but I have to say it's not a bad idea to go ahead and pitch the whole thing. I never really know how nicely those packets were treated before they got to me, so I assume less than optimum conditions...

    First timer

If your kit doesn't include hops, you're going to need some of those.

    Have I messed up totally?

Well, if nothing else, you've just made a stronger version of whatever it was you were trying to make. The yeast will be stressed but should still do its job. If you can get hold of another packet of the same yeast it wouldn't hurt to pitch that in there too to get to more of a correct cell...

    Are we ready?

Your answer for when the beer is done is in the hydrometer - how close to your anticipated final gravity are you right now? If you're still high, your yeast has probably stalled. If you can warm the fermenter up somehow (bring it inside, heating pad, hot towel in the microwave ... something)...

Tried to clean copper IC, weird gunk on it

I found a liquid version of Barkeepers Friend. Seems to do well on copper. For an immersion chiller I might just squirt some on a towel and go around the outsides. For the insides, I would probably stick with PBW.

    First BIAB Disaster

If you're going to spend another dime on a bag then get a custom one from wilserbrewer. They are high quality, purpose built and a good value.

    First Biab brew

You can use to find out how much mash water plus grain will fit into a given brew ketle. Put your recipe in and it will warn you if you're going to be able to fit everything.

    Help With Thin Brew!

I'd try to mash more around 154 next time and see if that is more to your liking.

    Have you used this hop?

Yep, good in American Wheats, Hefeweizen, Wit or most any Belgian style beer really. Note the low'ish AA.

Valve on a BIAB kettle with basket

Don't forget that when you add a bulkhead the kettle will naturally only want to drain down to that level - even with a pickup tube - without help. A pump, of course, eliminates this if that is what you are going for. Otherwise, be sure to create your recipe and water amounts with that much...

Experienced Brewer First Time BIAB, Couple of Questions

Phuff, I actually came to BIAB after, let's see ... 18 years now that I counted ... of brewing experience. I own/have access to two complete all-grain setups, one being 3 vessel herms/rims with every piece of gadgetry known to brewing. I was simply looking for a way to very quickly get back to...

    Way too high mash temp

There are a few factors that you have to take into account with BIAB brewing and mash temperature. The first one is that if you are used to the mashing at thicker rates your strike water temperatures with full-volume BIAB style mashing will be less to get you to the desired mash temperature...
