    Broken SSR?

Sounds like it. Just for sanity check, disconnect all connections on the ssr then measure again. Odds are that it is no good anymore but this will confrim it.

    Astringency in every AG Batch

I would highly reconmend it escpecially since you have a refractometer. Depending on who you ask there are different opinions on how low you can go. 1.008 - 1.012 is the general range with 1.008 being the lowest. I personally aim for the high side at 1.012 but if I occasionally need a bit more...

    Astringency in every AG Batch

Adding RO will not drop the ph by half but it will drop the mineral content of the water by almost half. You want to set a target of 5.8 for your sparge water. New all grain brewer question about recipe with Munich malt base?

Munich malt can be used for 100% of the grist bill as it is a base malt. Using a high amount(80%+) is a very common practice in German brewing(Munich Dunkels, Bocks and Alts). You absolutley could use what you have but it all depends on the style/flavour you're looking for. I've never used...

Silly cbugger pump and BK filter question

Trub and break material is fine without a filter. Just be sure to disassemble the head housing after use to clean out anything left behind. You will need a ball valve on the output side though to control the flow rate. Do not not control the flow from the input side of the pump as it will cause...

Hpw to get a deep red color in brewing.

For adding colour without much flavour, I like to use Chocolate Wheat malt. It has a colour of 550L so you won't need a lot. Looking at your recipe using any of the malts you listed at that low level shouldn't affect taste too much(if at all) because of the 1lbs of crystal and 1/2lbs of biscuit...
