    Going for a 2 gallon Single Hop and Malt Extract IPA 3 lbs Light DME. .75 oz Centenial(Pellet) 60min .50 oz Centennial (Pellet) 15 min .25 oz Centennial (Pellet) 5 min US-05 Yeast Am I on the right track?

    How old is it? A lot of them taste like rocket fuel when they are young

    First attempt at mead

    Degas very slowly..also add nutrient very slowly....you could end up with a very sticky volcano if you add the nutrient too quick....I may or may not have learned that the hard way

    Medieval Burnt Mead!

    Carmelized 3lbs of honey last weekend over a campstove....first there was one bee...then he brought a friend....and then they brought friends....and sure enough after awhile I had like 20 bees in a bit of a hover around my boil pot...

    I usually make my meads with fruit involved, so maybe that is where I heard bad things about using distilled water. I have always bought and used bottled spring water... Sorry didn't mean to divert your thread into an H2O science class :)

    Popping the question

    I had to phone it in as well, luckily at the time he was helping my brother in law do some work on his house, so he' had a couple or three beers...pretty easy deal.

    Isn't distilled water bad? IIRC it's missing minerals or something necessary for proper fermentation?

    Agave pulque mead

    Just racked to secondary today. Original gravity 1.086, Currently 1.009, pretty hot yet, but has some subtle citrus from the lime and and the Agave has added a different charm then just using pure honey. I kind of have high hopes for this one.
