What exactly are you going for? Also 5 gallons? Homebrewing is about what YOU like.. IMO. I would put a lot more hops... Maybe dry hop it. Also I would add a lb of honey malt or something to add more character/body to the beer. Sounds to me it will be a light brew which there's nothing wrong...
Other than drinking water before bed. One of the few benefits of being in the military is the next day I just hook up to an I.V. Always does the trick.
I cold crash.. Then transfer into keg an bulk age it in basement, which stays right around 60.. With winter coming it will go down to about 55. Which is great... I have no problems with this method. But with u doing 40 gallons of beer I would pre plan what u tend to age the longest. Porters...
I have done this also, after a few pints the beer should clear out around the dip tub... I keg hopped in a tea ball over 2 oz an worked just fine for me..
Treehouse brewing is a must!! Jack Abby's is a must! Opa opa milk stout is also good... (Not a huge fan of opa opa but milky stout is good) there are so many good ones! I would go to the local package store (Julio's or Austin liquors) an look around.
i plan on doing 2 this year, souther tier clone and something i wanna put together.. prolly will start ordering the random things i need for it soon an brew in about a month. i am not a huge fruit/ very sweet beer guy, but a nice pumpkin beer is always a hit in my house, friends an family. Cheers

IMO I like my beer good an carbed so after I take the bottles out of the fridge I always add a pinch of corn sugar to each bottle just to make sure...never had any problems
