    Slow Primary

One week into secondary with first of three dry hop additions underway. The last hydro reading was 020. Not great by any means but considering the situation ok. Turns out I under pitched big time. It may not be the final result I was hoping for but still highly drinkable.

    Dry Hopping

I am interested in knowing what dry hopping sched. folks are using out there. I remember reading a thread about dryhopping a certain amount per week or two. I normally chuck a whole bunch in at the beginning of my secondary and wait a certain amount of time depending on the brew. Any...

I went to the GABF last year and tried A LOT of great beers. The most memorable IPA for me was from AleSmith.

    Slow Primary

I brewed a Pliny the Elder clone last Wednesday, kind of a last minute idea. I did however have time to make a small starter the night before which really didnt take off. It was the first time I used my new 20 gal rig so I figured the effic would be down a little. I calculated around 70% as...

    Test Run of Shirron

I used my therminator yesterday for the first time. Living in central Canada our tap water temp stays quite cold all year round. It was able to bring 20 gal of wart down to pitching temp very fast. I love this thing

    20+ year old beer

Funny, I was thinking of doing something similar as I will ba a new father come December. I was thinking of making an Imperial Stout called Conception and keeping a few bottles to crack when he/she is 18(Canada).

    FishTail Ale

I have had it. Turns out it is the only IPA my booze store carries. I found it quite nice also.

    Screw it, I'm brewing....

HMMM. I have never thought to DH in stages like that. When I brewed PTE my recipe called for a total of 6.75oz which I chucked in all at once and left it for a month. Turned out great. I may try doing it in stages next time. Are there advantages? Probably my favourite recipe to date...

    AleSmith IPA

I wouuld love to do a trade however I live in central Canada. I am not sure what Canadian customs thinks about importing beer. Anouther issue would be the fact that the beer available here is S**T, hence the homebrewing. I will look into it though, maybe we could work something out thanks

Imagine seeing Miles in Osaka, Japan 1975

It would have been awsome for sure. I am listening to Kind of Blue on 180 gram vinyl right now and drinking my DIPA. YAH!
