Calculate boiling for your elevation. From your location tag looks like it should be around 210F
You can insulate your vessel to make it more efficient.
I have a big walk in cooler with a coolbot.
I can look inside the ac unit and see spots of mold etc. I spray it periodically with some bleach water but getting it all killed is not going to happen.

I would get enough whisky back in the keg to keep any bad guys from growing. A good roll to coat the internals and dilute any of the sugar down so it is more alcohol than sugar will help.
Dry hopping in primary works great. Just wait until the beer is finished fermenting.
Edit. Just realized how old this post is. You probably figured it out by now.
I like to use gelatin and find that putting it in the primary after the fermentation is complete works well.
Give it a small stir and Let it sit overnight or longer.
You can then rack to the bottling bucket (or keg) and proceed as normal.
From my experience It will not effect the yeast that...
