Ok, so my Weihenstephaner clone has been in the fermenter for 3 weeks and the gravity is the same today as when I checked it a week ago, so it's obviously done.
But here is my question: It looks really clear for a Hefe. When I rack to the bottling bucket should I siphon more of the sediment than you normally would for other beers? Or will the yeast multiply that much in the bottle? There's always LOTS more yeast in the bottom of bottles of hefes than any other beer I buy.
