I have made a few all grain beers now and I get a particular taste and smell when they are young.

I am wondering if this is just because they are young, (which I think it is) or my procedures.

Can anyone try to explain what young beer smells or tastes like. I know they can be different by beer but is there any similarity between them all?
 
The taste always goes away with time, but sometime the smell does not. Before I post what I smell and taste I would like to hear more responses.
 
Define "young". I made a blonde ale two weeks ago. Grain to glass was 9 days and tasted great.

I'm drinking my IPA now, 9 days from kettle to mug. I'm not noticing any off flavors.
