Testing mislabeled malts to see what's what

I have a few barrels of grains that have been mislabeled by one of our employees (now a former employee). I wonder if there is some kind of test that will allow us to determine what grains we have here.

I have a batch of grain that could be either chocolate malt, black patent malt, or roasted barley. A color, texture, shape and size comparison of the kernels with known grains is inconclusive.

Then there's a batch labeled "crystal" but this could be any Lovibond rating from 10L to 120L.

Suggestions, anyone?

I would mash, separately, one pound of each at 150°, cool to the same temperature, then assess color and flavor.
