I will start this by saying SWMBO will not let me get any more carboys.

I have a gal of cran-apple cider that has been sitting in the jug for two weeks and I was planning on racking to secondary in another two weeks. Once the cider is in the secondary I want to make a gallon of mead. Since I only have two 1 gal jugs when it comes time to rack the mead to the secondary I will need to rack the cider. Other than consistency is there any downside to bottling after only six-ish weeks in the secondary (or until I need to rack the mead)?
 
No downside other than what you've mentioned really, but you might find more sediment in the bottles if it hasn't fallen yet.
