I have 5 gallon of fresh pressed apple cider and its starting its own fermentation before I even got sugar added. Should I add my sugar and let the wild yeast continue on or should I pitch some Cotes?

Thanks!

I'm not a big fan of wine yeasts, and since a fermentation has already started, I say go with the wild yeast.
