Default Brunello moved to the secondary

The SG was really low, down around .992 after 15 days, this is going to be dry and strong.

The wine smells wonderful, very fruity and oaky. It is very dark purplle.

28 days of resting until I have to bottle.

I will NEVER make 18 months!

My way of dealing with that waiting problem is I am gonna just keep it in the carboy awhile and bulk age it. Its got three months behind it now. I did sneek a taste about a motn ago and it was very good. I think I am really going to enjoy this one. I was amazed that it through off almost no lees in the secondary carboy and had a very low specific gravity as well.
