I have been brewing over gas for some years now.
I have a new space to work with and am sick of the propane tanks and fumes.

I have been collecting various stainless vessels from the scrap yard.

Some of my goals:
5-10gal batches
Brew pot that is mounted and will not need to be moved to be cleaned.
All plumbed in, no loose hoses.

I have this for a HLT - 10gal size. I don't want to cut it.

I was planning on using the brew kettle to heat the water then pump back to the HLT. I see most people do not do this. They have an element in the HLT.

For my self cleaning brew pot, I have a 15gal conical. Looks like a stainless carboy right now, only one small hole. Would make a great fermenter... Really want to think before I start cutting on it.
If I go with pellet hops I can bottom dump trub before I bottom transfer through my plate chiller. But then I see some people are just inverting sanke kegs and doing the same thing - I do have sanke kegs also.

All of the other tanks I have are tall/narrow type. Not good for a mash tun.
What are the thoughts on tall and narrow for a boil pot?
