I brewed a 1.053 pale on Tuesday, hit it with some O2 and nutrient, and pitched a healthy starter of ECY29, aka the Conan strain. I woke up on Wednesday, and to my dismay, the ferm temps had shot up to 78 degrees I thought I had it under control with my ferm chamber, but these conditions just led to the yeast taking off like little maniacs. I got the temps under control by mid afternoon, but I'm afraid that the damage may have been already done.
It's my understanding that pitching a small starter of yeast can help to diminish the effects of diacetyl, which is what I'm most afraid of at this point. Could I grab some yeast from the primary vessel, make a starter from them, and repitch that, or am I better off getting a fresh vial of some other neutral yeast and working from there?
