so im doing an oktoberfest and im using WLP820 oktoberfest marzen yeast. so what temp should i pitch the yeast at? i was figuring pitching when the wort was 52f. is that right? or pitch at like 70 then chill the wort to 50-55?:confused:

My preference is to pitch slightly cooler yeast into slightly warmer wort, and then allow that to rise to fermentation temperature.

I put the starter in the fridge for a couple of days (it takes a couple of days for lager yeast to fall out in the fridge), then on brewday I take the yeast starter out while I'm chilling the wort and decant.

I then pour the 46ish degree yeast into 48 degree wort, and allow it to rise to 50 degrees for fermentation.
