Those are my options. Which should I go with? Going for most authentic bock result (with ale yeast anyway).

I those are your only options, S05 at 65 degrees would be the decent choice. Not the best choice, but if you only have those two yeast to pick from, it'd be the S05.

+1. S33 tastes great but 05 would be more authentico, amigo.
 
Hehe, different! I love both yeasts. 05 is cleaner, and would be a better choice for the style.
