The other day I came across one of those antique promotional bar signs, and after the name of the (now defunct Heidelberg) brewery, it said "The Slow Brewed Beer."

A google search shows a few other incidences of people using the same phrase, but for the life of me, I can't figure out what it refers to. Does it have anything to do with the actual brew process? If so, what?

I "slow-brewed" my IIPA a couple months ago. I think the brew day lasted like 8 hours from heating strike water to closing the fermenter.

Every brew I make is fricken "slow brewed". I have to wait WEEKS and WEEKS before I can drink it!
