I have tried some Lambic beer and I interested in brewing some. How long does it take? Any good discussion on this topic?
 
First time I tried Lambic Beer was at the Cantillon Brewery in Brussels... Little known to me at the time but they are considered some of the best in the game when it comes to Lambics. Not sure how long the process takes but if you can pull it off let me in on your secrets!
 
It'll take a long time. 1-3 years (or more?) per batch. Seems a common process is to brew the same lambic every year on the same day, and then blend the various years you have to make gueuze. If I ever find myself living somewhere I know I can leave one undisturbed for 3 years, I'm going to start doing this.

But, to answer your question, it takes about 2-3 years to make a good lambic.
