Hi all I'm interested in brewing and trying my hand at brewing an Eisbock as I really enjoy the style and there sure aren't a lot of commercially brewed options out there... I found this article and recipe:

I am just about to buy the grain bill from AHS and was wondering what everyone thought of the Reichelbrau Doppelbock Base (5 gallons, all grain) recipe....
Also if anyone could chime in as to what they use to "freeze" their beer that would be helpful as I don't use a freezer for lagering but a fridge with a Johnson temp controller. I was thinking of maybe transferring into sterile plastic gallon jugs and throwing it in the freezer until the temp hits 28F. Anyone have any suggestions for this concentration step?
