Default Unmalted Wheat

What is the point of using unmalted wheat? It it generally used outside the Belgian style beers? Is it simply steeped as a specialty grain?

Unmalted wheat will aid in head creation and retention. It can also be used to reduce maltiness without changing ABV. It has to be mashed.

If it has to be mashed that means there are fermantables being produced right? That means it will change ABV right?

Am I missing something?

Right, you replace part of the malted barley with wheat to maintain the ABV. Check out some wit recipes.

How much would you typically use if you didn't want to change the basic charactistics of the beer, but wanted improved head retention? Would you reduce your base grain by the same amount or just add the wheat as an extra?
