Hey everyone,

I have been brewing one my own for about a year now, and 3 years or so with my dad. I dont brew that often, but I did a few early batches that just didnt turn out right for various reasons (mostly mistakes in the process). For this last batch, my wife encouraged me to write every part of the process down. I did this and it worked perfectly. Issue free brew day... Heres the recipe and its definitely my best. Grain to glass in 4 weeks!!

I fermented at 62F for three days and then raised to 65F for 11 days (total fermentation was 14 days).
Bottled to 2.5 volumes of C02. Its been sitting at 68F for 10 days. Already has awesome carbonation.

Tasting notes: Nice caramel background in the beginning and finished with some roasty toasty malts. Balanced with some minty wood NBs throughout. Really love the nice touch of fruity esters from the WLP810. So much different then those bad ones you get from underpitching Cal Ale (thats just my experience).

Good times.:mug:
