Default Hopburst Recipe - Please Critique

Hi All-

I am trying to come up with a tasty Hopburst American Amber Ale with quick turnover and short boil. Please let me know what you think, I'm not 100% sure what this will taste like. I am looking for a nice caramel malt flavor with a big hop flavor and aroma, medium to low bitterness.

OG - 1.040
FG - 1.010
SRM - 11
IBU - 39.8 Tinseth
ABV - 4.0%
Calories - 131 per 12 oz

67% 3lbs 8oz Light Dry Extract
10% 8oz Munich Malt
10% 8oz Crystal 40L
5% 4oz Flaked Barley
5% 4oz Crystal 120L
5% 4oz Victory Malt

20 mins 0.5oz Centennial
20 mins 0.5oz Amarillo
10 mins 1.0oz Centennial
10 mins 1.0oz Amarillo
1 min 1.0oz Amarillo
1 min 1.0oz Centennial

WLP051 California V Ale Yeast

Soak grain 30 min at 155 degrees, remove grain, boil, remove from burner and add extract, boil and add hops a time intervals, strain and fill with cold water to make 5 gallons, add yeast at room temp, keg after primary fermentation.

You'd get better results making this a mini-mash, as all of the specialty grains will provide additional sugars in a mash. Drop a pound of the DME and add a pound of 2-row. Use a gallon of water. 155F and 30 minutes would do it.

Your OG might end up a little higher as well.

Here is what I ended up brewing tonight, something like the Evil Twin recipe:

HOPBURST AMBER ALE

Batch size: 5.0 gallons
Original Gravity 1.040
Final Gravity ???
Color 14° SRM / 27° EBC (Copper to Red/Lt. Brown)
Bitterness 34.1 IBU (Tinseth)
Equipment 7.5 gallon kettle, 6.5 gallon glass carboy, stovetop

Malt
50% 3lbs Light Dry Malt Extract
17% 1lb American Two-row
8% 8oz Crystal 40L
8% 8oz Munich Malt
4% 4oz Crystal 120L
4% 4oz Pale Chocolate Malt
4% 4oz Victory Malt
4% 4oz Dextrin Malt

Hops
boil 20 mins 0.5oz Centennial leaf 10.1AA
boil 20 mins 0.5oz Amarillo leaf 8.6AA
boil 10 mins 1.0oz Centennial pellet 9.7AA
boil 10 mins 1.0oz Amarillo pellet 8.2AA
KO 1.0oz Centennial leaf 10.1AA
KO 1.0oz Amarillo leaf 8.6AA

Boil: 2.7 avg gallons for 20 minutes

White Labs California Ale V (WLP051)
