I'm going to brew my first IPA soon. I have a recipe formulated from looking at several different examples on here and clone recipes of ones I like. Just looking to see what people think. Cascade and Centenial for the hops as I have 4oz of each that I need to use soon.

I would like to stick with the above mentioned hops or ones from the below list as I have way to many hops and would like to use these before I purchase more.

other hops I have on hand are (4oz Each):
Crystal
Fuggles
Horizon
Perle
Santiam
Willamette

Thanks for your help!

Id cut the caramel malts to 1# max, total. And maybe replace some base malt with munich or vienna.

Personally, I'd pull the 45 minutes addition and move it later, to 15 or so. Also, I'd only do one bittering addition, either the 60 or the 90, and adjust whichever one you pick to the required IBUs. You can move what you have left over to a flavor or aroma addition, or use it to amp up the dry hop a little.

I tend to think 45 minute additions are a waste. You're getting almost all bittering, but it's not as efficient hops-wise as a full 60 or 90 boil time. Better to bump some to the 60 or 90, and use the rest later on in the boil. But that's my opinion. If you're just looking to dump hops, that schedule will work fine.

Cascade is a great hop, as is Centennial. And they go together really, really well. You'll be pleased no matter where you use them, honestly.

i'd back off the c40 to 1 and the carapils totally, and let the c40 do it. that recipe will come out sweet, otherwise. maybe throw in 1# vienna

This.

Also second the motion of bittering as early in the boil as possible, then starting your flavor hops at 20m, and aroma at the end of the boil. Save a couple oz for a dry hop, and you're golden. In subtle beers, the mid-range (45, 30, etc) hop additions may affect the outcome of the finished product in that different hops have different bittering characteristics that can have a discernible affect on the flavor profile, but in an IPA that's composed of aggressive flavors and aromas, my experience says that such additions will be lost.

I concur with most of the above suggestions. You have too much crystal. Knock it down to 1 to 1.5 lb C40 and drop the carapils. The C40 will give you some color and head retention along with the wheat malt. Too much crystal can lend too much body or residual sweetness to an IPA

You are getting too much of your IBU's early, which will be heavy bitter and little flavor/aroma. I'd go 1.5oz Centennial at 60 to 75 mins and drop the 90 minute addition. Move your 40 min addition to 20-30 minutes, and bump your later additions (20 minutes and under) up to get your IBU's back up. This will give you much better flavor/aroma laced on top of your bitterness.

You could leave the crystal, but then you should mash in at 147-149. I agree also to double your 5 min and flameout

What's your goal with the wheat? I'd either bump it up to 6-12% of the recipe or get rid of it altogether.

12% crystal 40 isn't really a big deal if you bitter beyond 100+ IBUs & finish real low...even if you mash at 151-154. Green Flash West Coast IPA does not mash below 150 and is approx. 7.3% abv with 100+ IBUs and 16% total crystal malt!!

My real concern though is the hop schedule. Use a simple 90/10/0/DH schedule. Get 100+ IBUs from 1.5 to 2.0 oz. at 90 and add about 2.5 more oz. at 10 minutes. Add another 2.5 oz. at flameout and another 4.0 oz. at dryhop.

*Horizon is a great dual purpose IPA hop.

*Santiam & Willamette have worked when utilized at flameout in large amounts for Lagunitas hoppy beers.

*Stone uses Perle to bitter their regular IPA.

Lastly, you'll need to make a starter with the WLP001 for 1.070-ish OG.

Adjusted some of the malt bill and the hopping schedule. Let me know what you think.

Will definitely be doing a starter, and use my oxygen stone and tank for the first time :)

thanks for all the advise.

That grain bill and hop schedule looks a lot better. Looks like a fine IPA recipe.

thought u only had 3oz of each? i'd save all 6oz of them for the last 15mins & dry hop and use the perle or horizon to bitter
