Hi-

I'm trying to put together a Berliner Weisse recipe. How does this look?

3.15# Northern Brewer Pilsen Malt (LME)
2# Muntons Wheat DME
1 oz Hersbrucker (15m)

WYEAST 3191

Pretty simple, but I want to be sure I've got the balance right.

Looks like that'd work. There are lots of different methods to create a BW :)
 
brewing a BW this weekend and shooting for 30% of my grain to be wheat... right now you're at. 1.3# of wheat with 3.85# of base. 33%... looks good to me. (assuming muntons has a 65/35 wheat/base malt recipe in their DME)...
 
Muntons is 55/45 wheat/base. So, I think I'm closer to 25%.

Just realized I can't get 3191. It is not available anymore.

Any other thoughts?
 
I've had great luck with lacto and US-05. US-05 is an especially good choice for an extract beer because it is so attenuative. Just make a starter for the lacto so it is rolling when you pitch it (apple juice works well, and keep it warm to speed up growth).
