Adding bitterness to a RIS via coffee?

So I just brewed up an all grain RIS and did way, way better on my efficiency than I planned. My OG was 1.098--I was planning on around 1.080--my original IBU was going to be around 65 or so, but I recalculated my IBUs at 55.:drunk:

I'm worried about this coming out too sweet now. Could I add more bitterness by adding some coffee to the secondary? Any tips? Thanks!
 
You can make a hop tea.

By the way making bitter coffee either means you used crap coffee or over extracted the coffee. Plus the bitterness will be the wrong type of bitterness it will be harsh and unpleasant.
 
I don't know much about hop teas, but from what I've read they are used for aroma and not added IBUs. Am I wrong about this? And if so, how would I go about it?
