Ok so I found a nice 5 gal pot SS but it was used for cooking soup once before. Now the process of making soup was cook it then let it sit overnight then take all the fat off that hardened in the morning.

This pot would be used for doing a PM as shown by DeathBrewer https://www.homebrewtalk.com/showthread.php?t=75231 just to step into it as costs are tight.

Would this pot work well or has it been "tainted" by the fat/oils?

Sure, use the pot. Just scrub it with barkeepers friend and rinse well. If that is not big enough then it's time to buy a nice brew pot with a ball valve and thermometer. There is nothing like the right tools for the job.
