I was wondering how long a starter will stay good for without having an ill effect. I planned on brewing tonight.. The starter has been active since monday and i can't brew until saturday.. Should i throw it in the fridge?? out??
 
I left a starter on the counter for 6 days then decided i should put it in the fridge. 3 days after that i brewed and it took only 6 hours for fermentation to really get going.

I can agree with you to a point, but my intent is to try to have both the brew and the starter about the same temps.

I know I read (somewhere) that one practice is to refrigerate the wort then pitch a cold starter. I don't really agree with that because even lager yeast needs to start at a warmer temp before being placed in the cold. Ale yeasts like warmer temps, so room temp starters just seems logical.;)

I've begun doing this as standard practice, too. When chilled overnight, the yeast falls out of suspension to the bottom of the vessel. I warm it up, decant off most of the spent wort, swirl and pitch!

Won't this shock the yeast? I usually try to get my yeast and wort to within several degrees of each other before pitching.
