Hello everybody, I made a yeast starter for the first time using the leftover yeast from the saison I recently brewed. I have about a quart of the starter in my fridge. I was wondering what beer I could brew to use that yeast. I'm guessing it would have to be another saison? Also, would I pitch the whole quart or so?
 
Saison yeast has such an overwhelming flavor that, yeah, whatever you use it on will have an overpowering saison character. Maybe make a totally different kind of saison than the last? As for the 1 qt starter, decant the beer on top and use the whole thing.

Did you make a starter from the slurry or harvest one quart of slurry? If it's harvested slurry, did you rinse it or do you have beer over top of the slurry? How much of the quart is actual slurry?

I harvested it and it is about 2/3 of the quart. The rest of the quart is beer.
 
That sounds like enough yeast to just direct-pitch into your next batch.

I agree with PoppinCaps, you're best bet is to go with another saison. Maybe try a dark saison this time?? Or try a hopped up saison, I've been reading that Nelson Sauvin is a great hop for saisons. Another option would be to add some Brettanomyces along with the saison yeast, if you're into that sort of thing.
