So I thought I was going to brew this weekend so I started a yeast starter. I was about to throw the yeast in and my wife said we had stuff to do this weekend. Can I just put the yeast starter with no yeast in it in the fridge ? Will it last a few weeks since its got no yeast and just basically sugar water?

No. Wort (I assume you used some DME?) would go bad very quickly. It might be ok in the freezer, but bring it to a boil again before using.
 
I wouldn't do that. Either pitch the yeast and start it then put it in the fridge, or throw that sugar water away. I mean, sugar is cheap right, why go through the trouble of saving it.
 
So I canned 30 oz of starter wort when I brewed last. It's been in my fridge about 1 month. I've heard of people doing this. What is the consensus on canned wort?
 
I always have frozen wort for starters it works great!! i just reboil it before using it. So i say just freeze for a later use.
