First time I had to make a yeast starter last night for a Bourbon County clone I'm trying to make today (about 14%). I mistakenly mixed my starter with 1 quart of water and 1/2 cup of DME instead of the 1/2 quart I've seen recommended. Also used 2 packs of US-05. Its bubbling away this morning but my question is did I make too much? Should I use the whole quart? Just half? I'm thinking the yeast are fine? Thanks for any and all help.
 
First thing is that you don't really want to make a starter with dry yeast. The 2 packs were probably OK if you just rehydrated them. And you want all that yeast into your beer so pitch it all. You might want to research yeast for high ABV beers. If you truly have 14% US05 might not be able to finish the job.
