I always use safale 04 yeast and make mainly 4% SMASH beers. Today's yeat sediment was granular and easily disturbed, last weeks was smooth and firm. Any ideas why this variation, many thanks.
 
You are talking about on the bottom of the FV and not in the sachet aren't you?

Any difference in the amount of solids in your wort from one batch to the next that might have just resulted in more or less trub that packed differently?
 
yes - at end of fermentation - I always use a fresh sachet of yeast for each brew - thanks
