So, I had to put my mead making on hold for the past, almost 2 years. Now that I've just made my first batch in the new home, I have a question about yeast. The yeast I bought (almost 2 years ago) expired in June. I just used it to make a batch. It seems to have started OK, pressure building up. Just wondering if there is something I should be watching for to see if this goes sideways or not. I'm assuming that yeast expired by 2 months isn't really a big deal, but I'm sure if I don't use it soon I'll just have to buy more. It is Lalvin 71B. TIA!

It should be fine, give it the usual nutrients and enjoy. I’ve used properly stored dry yeast expired 1+ years and it’s been fine.
