I just finished making my second 4 gallon batch of yooperbrews welch's wine recipe, and I was wandering if I'm going to have to get up at 6am to pitch the yeast? I overlooked the fact that the pectic enzyme, superferment and acid blend needs to prepare the must for 12 hours. Is it important to pitch at 12 hours or can I sleep in a little longer tommorrow?:cross:
