What the better yeast to use for a fruit wine red star Montrachet or lalvin ec-1118

Sent from my iPhone using Home Brew

It depends on what kind of fruit.

For high malic acid fruits, I'd prefer something like 1122 (norbonne) as it metabolizes more malic acid than other wine yeast strains. But the differences between EC1118 and red star's montrachet are really negliglible.

Not all fruit has sufficient nutrition for montrachet (risking H2S formation). I'd go with the 1118. (or, manage the nutrients and other variables for hydrogen sulfide)
