I planned to brew today and pitch onto the yeast cake of another beer that I was going to bottle. Looks like I can't fit it all in today, but I'd like to at least bottle. I thought I'd siphon to bottling bucket, then put the primary lid back on and try to keep the yeast overnight. Can I let the yeast cake sit by itself (with no beer on it) overnight, or does that risk contamination?
 
Good to know. I was just wondering about this. I was going to ask, but instead just waited until I could do it all in one day.

Guess I could've done it sooner.
