So I have a bit of a problem: the yeast I need for my Liberty Ale clone brew I was only able to get in liquid form (which I've never used before) in a vial for 5 gallon batches. However, I will be brewing a 2 gallon batch due to my space and equipment limitations (two separate 1 gallon carboys). What would be the best way to pitch the yeast?

It's best to pitch the whole thing. Before your transfer to the carboys, just shake it up throw it in, and give it a careful swirl with a sanitized utensil. On a home brewing level, it's always better to over pitch than under pitch, unless you're experienced enough to know how to stress the yeast for desired flavor profiles.
 
My normal batch size is 10 liters, about 2.5 gal. Using the pitching rate calculators, it pretty much works out for most of the beers I brew (typically 1.050 to 1.080) that the vials or smack packs are just about the right size.
 
Alright, thanks, that's what the guy at the supply store told me as well. It just seemed a bit odd to me. I'm sure my concern was influenced as this is my first batch made up from my own recipe rather than an all grain mix that comes with everything measure out. Anyways, thanks for the advice!
