Should I just throw in my lambic blend into the primary, having in mind that there are some Sach strains inside the pack, or should I first ferment the wort with Sach and leave the bugs for secondary? Thanks
 
Yes you can primary with Lambic blend. Lambic breweries spontaneously ferment, so nothing is added to a secondary. Be aware that the blend is a crazy active fermentor and you will need a blow-off. Once it's finished primary you can leave it, but also be aware that with all the blow-off you will have quite a bit of head space and may want to carefully transfer to a secondary to avoid excess oxygen permeation over the long time it takes to make a good lambic. A pellicle will help protect the beer if not transferred, but once the effects of oxygen set in it ruins a batch.
 
I've made some really nice sour beers using that yeast as a primary. But I also like to add some bottle dregs with it.


Same here. Ive found the Lambic blend to be inconsistent. First time was nice lemon aromas from the smack pack and made a nice sour beer w bottle dregs.

Next time super barnyard funk from the smack pack and an extremely brett forward beer. Still aging this one. Currently smells like a freshly opened can of tennis balls.
