So I brewed my first saison with this strain during fermentation it gave me fruity and peppery phenolics. I have now force carbed the beer and the first sample is Overwhelmingly banana and clove on the aroma. Has anyone else had this? I have read several reviews and most dont express this. Also I did not pitch warm (69 degrees) and i raised it to dry out so I know its not my fermentation regiment. The only thing I didnt do was make a starter so im wondering if that was the cause.
 
yes sir underpitching leads to excess esters..how well did you oxygenate? that will be another factor..if you underpitch and dont aerate enough you are gonna have a batch of banana runts
 
I dosed it with enough o2 but i agree with both of you the culprit was underpitching. i figured this out because i washed it reused it, then pitched the right amount and it was way better. Thanks for replying dudes!
