So this is my second batch of hefeweizen. the first I used 6lb dme and a pack of danstar munich. For this one due to lack of product I used 3lb dme and 3.3lb one and got my hands on a smack pack of 3333. I'm using a 6 gallon carboy and with the danstar I definitely needed a blow off tube. With the 3333 I never needed one and it took 24 hrs to see any activity. I have read other threads where ppl say they always have an active ferment with this yeast but mine never was super active it got within a inch or two of the carboy around day 3 but by day 6 the Krause had fallen. Any thoughts should I be concerned?
 
Use the blow off as cheap insurance, what the yeast did yesterday is not the same as today. The yeast has a mind of its own. That said if you repitch the yeast it becomes more reliable in performance.:mug:
