My second batch was a Hop Devil clone kit (partial grain) from my LHBS. I brewed it up, secondary and then bottled for three weeks. Along the way I had my tastes. I tasted at 10 days and it wasn't bad at all...better than my first batch. At two weeks it was a little better but certainly nothing like Hop Devil nor was it even like an IPA. This past Wed made 3 weeks and it was very good but still not like an IPA and far from a Hop Devil.
With all the hop additions I was surprised and even though I didn't dry hop I thought I would still get a little hop aroma, but I didn't. No bitterness to speak of either.

I just got home and cracked one open and now it's three weeks and 3 days in bottles. WOW! What a change! More head and more aroma. I can smell the cascade hop. It is also more bitter and although I still wouldn't consider it to be like a Hop Devil it is more like an IPA now with some hop bitterness and also some maltiness in the balance.

Very satisfied. It's amazing how these things change.

I feel a bit like this..........:rockin:

It's really something how good beer can be when it is made right, isn't it? I am constantly amazed that with all the technological and industrial expertise out there, that the big brewers simply can't seem to get it right. It isn't like this in every industry, thankfully, but for no good reason that I can think of, the giants of the beer industry just can't seem to make a good beer. Once you make your own, you will never want to go back.

BMC makes very good beer, if your goal is to maximize profits. If you can sell beer with 3.5 IBU (Mich ultra), why put in 30 or even 10? Think about it, a CASE of Ultra has as much AA in it as a PINT of Racer 5!

Quick!!! Drink it ALL!

Oh it's going fast.
Actually I just finished the last bottle from my last batch and drank it along with the bottles of this new brew yesterday. The sad thing is that I wasn't sorry to see it go! After tasting my latest I was happy that one is gone. It came out good but I just wasn't really impressed[/I].
Now as for this brew, I'm fighting not to drink it so fast because I want it around for awhile but I can't help drinking it up!!
It's still a little warm in my basement so I may wait until October but I'm getting really itchy to brew up that Oatmeal stout I'm waiting to do. Now more than ever.
