Would you change anything in this Porter?

Shooting for a sort of Coffee, carmel, chocolate Porter. Am I trying to do too much?


Extracts:
3lb 3oz Pale LME
3lb 3oz Amber LME

Grains (Steeped at ~155 for 30min):
1lb Flaked Instant Oats
12oz Crystal 60
8oz Chocolate Malt
8oz Honey Maly
4oz Black Patent

Last 10-15min of boil:
2oz Baker's Dark Chocolate
4oz Whole Bean French Roast Coffee (more?)
1oz Irish Moss


Hops: (looking for a woody hop) Northern Brewer maybe?

1oz Pearle - 60
1oz Tettnang - 30
1oz Cascade - 10

Safale Dry English yeast

Primary for 10 days
Secondary for 24 days

OG: 1.053
FG: 1.013
29 SRM
34.3 IBU
5.3% ABV
 
The only thing I would say is that with all the intense flavors (chocolate, coffee, caramel character, honey malt, etc) I would back off on the late hops. I like hoppy beers, but I don't think I would like a dry-hopped cup-o-joe or hop-filled truffles. If you have too many conflicting flavors, they can become muddled in the finished product.

Other than that, the recipe looks pretty good.

I just placed the order. I ordered Northern Brewer for the full boil and Fuggles to add at an interval I'll decide later. Probably 1oz @ 30-40min.


What is your opinion on substituting 4oz Biscuit Malt for 4oz of Honey malt?
