I've been playing around making my own extract recipes, and have had mostly favorable results so far, but I'm still pretty new to homebrewing. I have a friend who enjoys floral hops, and enjoys wine, and I want to see if I can make something that would appeal to them. My thoughts so far:

-For steeping grains, 1/2 pound of Belgian caramel pils malt, 1/2 pound Belgian biscuit malt, 1/2 pound honey malt (because its what I have on hand, and it sounds interesting)
-6 lbs light DME
-1/2 oz Nelson Sauvin, 1 oz Saaz (60 mins)
-1 oz Nelson Sauvin, 1 oz Saaz (flameout)
-WLP500 yeast

Beersmith has it come out to 1.054 OG, 1.012 FG, 5.6% ABV, and 37 IBUs (0.685 IBU/SG). I don't want the NS to be overpowering, but I definitely want to notice it. I've also thought about adding chamomile for a little more floral aroma. Anyone have any thoughts?

I'm also going with full volume boils, if that makes a difference for you all (5.5 gallons for a 5 gallon finish).
