Has anyone tried co-pitching WLP565 and WLP644? I've got a lot of grain for a rye saison and was planning on making a 5-6 gallon experimental batch that I'd add a lot of various brett dregs to during secondary.

I'm brewing with WLP644 today and saved some for a future brew and thought about co-pitching in the saison.

Anyone have any thoughts or experience with this?

I haven't, but I've used both of those yeast, and have both in my fridge. I am tossing around the idea of doing something similar, but am going back and forth on using wlp565 or wy3711.

Here is my take. If you are going to pitch brett into also, not sure that you are going to get that much noticable contributions from the yeast blend as any of the times i've done a brett saison the brett is the most prevalent aroma. I might be completely wrong though. My plan is to do a clean saison, so I think that each yeast will come through in the finished beer. I've done wlp565 and 3711 together and really like it. I never have a problem with it finishing really low (1.001 or .002) and don't have to do crazy things with the temp to get it there.
