WLP500 in HefeWeizen?

Just started brewing a Hefe extract. Thought I had a yeast harvest for WLP320...but all I have in stock is WLP500 (Trappist), wyeast 1056, and WLP007 (dry English ale). Thoughts? Should I roll with the WLP500?

hmm it wont be a hefe but if you keep temps lower 68 ish you could come away with something akin to a belgian blonde.

1056 with some extra flameout hops or dry hopping could net you a hoppy american wheat.
