So I found a clone recipe for allagash wit. Want to do 10 gallons. It is as follows...
13.5 lbs pilsner malt
8.5. lbs German wheat
2 Oz tettnager 60 min
.65 Oz saaz 60 min
.65 Oz saaz 1 min
.6 Oz coriander
.6 Oz Ginger
.6 Bitter orange
wlp 400/410

Here's my question... Should the wheat be unmalted, malted or a blend of the two? If a blend... What percentages? This probably goes without saying but I would really like to make a tasty and true to style beer so I was just looking for some input from the experts. Also. Was looking to do a single infusion mash at 152. Does that sound right/reasonable? Any and all input is greatly appreciated! Thanks
 
Actually I had read thru your recipe in while searching around for some ideas. What was your mash schedule? Or did I just miss it when reading? Having reread your recipe I may do some tweaking. Thanks
